How AI-roasting works

Each coffee gets a roast curve computed from its green-bean measurements, executed on a temperature probe, and verified against that curve batch by batch. The four steps below are the process, start to finish.

Step 01 · Analyze the bean

Every roast starts from the green coffee

Before any heat, the green coffee is measured. Its density, moisture, bean size and process all change how fast heat moves into it, so the roast is built around those numbers from the start.

Step 02 · Build the curve

The model computes one target curve

From that read, the system solves a single roast curve for the lot: the charge temperature, the rate the heat climbs through the drying and Maillard stages, where first crack falls, and the development time after it that sets body and sweetness.

Step 03 · Run the roast

The roast follows the curve on a probe

A probe sits in the bean mass and reads temperature several times a second. The burner is trimmed continuously to keep the real rate-of-rise tracking the modeled curve, so the roast follows the data, not a timer or a roaster’s eye.

Every batch is checked against target

Every batch is logged and overlaid on its target curve. Anything that drifts outside tolerance is flagged and corrected, which is why the bag you reorder next month matches the last one.
