A single-origin coffee from the high mountains of Huila and Cauca in southern Colombia, where steep slopes, cool nights, and rich volcanic soil grow some of the most structured and best-balanced coffee in the world.

It is washed and dried the traditional Colombian way to strip the cup back to something clean and precise, so what reaches you is the bean and the place, not the processing.

We take it to a light-medium roast, far enough to build the deep cocoa underneath while keeping the brightness on top fully intact, the balance point this coffee was built for. A balanced coffee has nowhere to hide a roasting mistake, so our model holds that exact profile on every batch.
