Single-Origin Guatemala
A single-origin coffee from the volcanic highlands of Guatemala, grown under shade in deep mineral soil at an altitude that slows the cherry down and concentrates everything good inside it.
It is washed and sun-dried in the dry mountain air, the classic Guatemalan method that yields a clean, layered, almost elegant cup, the structure behind this coffee's refined, tea-like backbone.
We roast it light-medium, the level that draws out a rounded, syrup-like sweetness without burying the delicacy underneath it. It is a fine line to walk, and our roast model walks it identically every batch.
