For weeks before they are picked, the plants are kept under shade, which forces the leaves to flood themselves with chlorophyll and amino acids. That is what gives true ceremonial matcha its deep jade color, its natural sweetness, and its smooth, savory umami, with none of the bitterness or chalk of cheaper culinary grades. The leaves are then stone-milled, slowly and cold, into an impossibly fine powder.

Whisk it with hot water for a clean, focused lift that holds for hours, or with steamed milk for a latte. Shade-grown leaf and nothing else.
